Lemon Baked Salmon

Method

  1. Season salmon filets with salt and pepper.
  2. Let the seasoned filets rest for 15 minutes.
  3. While the fish rests, thinly slice the lemon to about 1/8 to 1/4 inch.
  4. Preheat oven to 375 F.
  5. After resting, place salmon in a glass baking dish, skin side down.
  6. Optional: coat filets lightly with black bean sauce or oyster sauce.
  7. Cover the top of the salmon with lemon slices.
  8. Bake for 20 to 30 minutes, depending on filet thickness.
  9. Remove from oven when baked and serve.

Make-ahead note: if assembling ahead, do not put lemon slices on more than 30 minutes before baking or the fish can turn bitter.

Options

  • Coat with black bean sauce before lemons for a savory, fermented edge.
  • Coat with oyster sauce before lemons for a sweeter umami profile.

  • For a traditional rice bowl, break up the salmon and serve it over rice.
