Red Wine Pan Sauce

The brown bits in the skillet are fond: concentrated flavor already paid for. Recover the asset.

Ingredients

  • 1 tbsp fat left in the searing pan
  • 1 small shallot (about 30 g), minced
  • 120 ml dry red wine
  • 240 ml unsalted beef stock
  • 30 g cold unsalted butter, cubed
  • 1 tsp red wine vinegar, optional, to taste
  • Salt and black pepper, to taste

Measures: 1 tbsp = 15 ml; 1 tsp = 5 ml. Yields are approximate. Pan width and heat affect reduction time; the texture gets the final vote.

Method

  1. Inspect the pan

    Remove cooked meat to rest. Pour off all but 1 tbsp fat, leaving brown fond. If the bits are black and bitter, use a clean pan instead. Soften shallot over medium heat for 2 minutes.

  2. Deglaze

    Take the pan off the heat to add wine. Return to a simmer and scrape up the fond with a wooden spoon. Reduce the wine to about 2 tbsp.

  3. Reduce the stock

    Add stock and simmer briskly until roughly 150 ml liquid remains, about 5–8 minutes. The exact clock depends on the pan.

  4. Mount with butter

    Remove from heat and swirl in cold butter a few cubes at a time. Taste, then add salt, pepper, and optional vinegar. Mounting just means finishing with butter for gloss and body.

Checkpoint: Glossy sauce that lightly clings to the meat rather than running off like stock.

Failure modes and fixes

Greasy finish: take off heat and whisk in 1–2 tsp water. Thin sauce: reduce before adding butter, not after.

Put it to work

Steak, lamb, or roasted mushrooms. Add resting meat juices before the final seasoning.

Storage and reheating

Cool promptly in shallow containers and refrigerate within 2 hours (1 hour above 90°F / 32°C). Keep at 40°F / 4°C or colder for 3–4 days, or freeze in portions. Bring reheated cooked sauces to a rolling boil; for butter-finished sauces, ideally store the base and add fresh butter after reheating. Cream sauces may separate after freezing.
